The Mooloolaba Office has a great new coffee machine - thanks to Tony (our "go-get-'em" leader). You're always welcome to drop in for one, and have a look around while you're there.

Ant and Dave have a significant number of Catamaran yachts to sell now. Most of the larger production types, such as Leopard's, Fountaine's, Lagoon's, Seawind's, Brady's, Perry's, etc, are all there. The prices vary from about $150k to $500k, something for everyone. If you're in the market, Mooloolaba Marina is certainly the place for Cats!

Enquiry levels are apparently up, and enthusiastic owners are 'moving' their boats. "It's a happy place to be".

Sail Mooloolaba European Challenge Show
23-24 June 2012

You are invited to compete in this year’s Sail Mooloolaba European Challenge. Held on the weekend of 23rd and 24th June, the challenge is all about having fun out on Mooloolaba bay.

The Challenge is open to all European production monohull yachts. 

The races are around the bay and the choice of division, either spinnaker or non-spinnaker, is up to you. What you don’t have a choice in, is enjoying yourself.  The sailing venue is stunning, it takes no time to travel from the harbour to the race course, there are plenty of delightful places to eat, drink and play, and the parties are legendary.

For multihull owners, there are the Multihull Cruising Spinnaker and the Multihull Cruising Non-Spinnaker divisions. These divisions will also race around the bay and then join in the post-race parties with the monohull teams.

Sail Mooloolaba is an annual week-long of celebration of sailing on the Sunshine Coast. The event is organised by Sail Mooloolaba Inc which is a partnership of several Sunshine Coast sailing clubs and class associations. Throughout the week there are several sailing events from dinghy, keel and multihull boat open water racing off Mooloolaba Beach through to sailing for the disabled, radio controlled yachting, fun races and school-age match racing on Mooloolah River.

Back with us after a two year stint in Sydney, Scott Cook warms to the Gold Coast lifestyle once again.

Ensign welcomes Scott back to the team and as expected he is already feeling right at home.

Growing up around waterskiing was a great introduction to the wonderful world of boats. By his teenage years he was also sailing 18" skiffs and working on boats.

During his many years in sales of water craft he has sold new and used vessels of all types and sizes.

"I now live in one of the best waterways in the world on the Gold Coast and look forward to helping you to purchase or sell any type of water craft", Scott says.

EASY PAELLA

Ingredients:

• 1 tbs olive oil
• 500g chicken breast fillets (preferably with skin), cut into bite-sized pieces
• 1 onion, finely chopped
• 1 chorizo sausage*, chopped
• 1 cup (200g) basmati rice
• 1 tsp ground turmeric
• 425g can chopped tomatoes, drained
• 1 red capsicum, chopped
• 2 garlic cloves, crushed
• 1 small red chilli, seeds removed, finely chopped
• 2 cups (500ml) chicken stock
• 250g cooked prawns, peeled
• 425g can cannellini beans, rinsed, drained
• 100g baby green beans, topped, blanched and refreshed in cold water
• 2 tbs chopped coriander leaves
• Lemon wedges, to serve

Method:

1. Cook the chicken pieces in batches for 3-4 minutes, turning until golden and cooked through. Remove and set aside to drain on paper towel.

2. Add the onion and chorizo to the pan and cook, stirring occasionally, for 1-2 minutes until the chorizo begins to crisp. Add the rice and turmeric and cook, stirring, for 2 minutes, then add the drained chopped tomatoes, capsicum, garlic, chilli and stock.
3. Bring to the boil, then reduce the heat to medium-low and cook, stirring occasionally for 15 minutes or until all the liquid has been absorbed. Return the chicken to the pan with the prawns, cannellini beans and green beans.
4. Toss and heat through for 1 minute.
5. Stir in the coriander and serve immediately with lemon wedges.
